How to make
The beans are soaked overnight in a container of water.
The next day they are washed and transferred into a clay vessel - guvec.
Add the chopped onion, carrot, salt, oil, spices, flour, mix and fill with two liters of water.
I add the ragout in pieces, washed in advance. I close the lid and put the cold guvec in a non preheated oven. This is important, so that the guvec does not burst.
I switch on the oven and set it to 390°F (200°C) and that way the desired temperature is gradually reached.
When that happens, reduce to 360°F (180°C) and finish off cooking.
The total cooking time of the beans with pork is 3 hours.
Serve the Oven-Baked Beans with Smoked Pork with chili peppers.
