For this healthy keto salad, the onion, carrot and pepper are finely chopped, the zucchini and mushrooms are diced and the garlic is finely chopped as well.
The soy bites are sprinkled with a little cumin and poured with hot water.
Fry the onion, carrot and pepper in heated oil. A few minutes later, the finely chopped garlic is added.
Then add the mushrooms and when they begin to soften and brown, add the zucchini.
2-3 minutes after that, add the strained soy bites, vegetable broth and spices to the bean salad.
Add the washed quinoa and pour 1 cup of water. Let it boil, reduce to low heat and time 15 minutes from the time it starts boiling.
When the quinoa is semi-cooked, add the strained black beans.
Season the quinoa and black bean keto dish with a little salt if needed.
