To prepare this delicious chicken in tomato sauce, you need to peel the tomatoes. The easiest way to do this is by immersing them briefly in boiling water.
Then cut them into small pieces or grate them with a grater.
You can also use canned tomatoes.
Season the chicken with salt and black pepper and fry in hot oil briefly, just enough to seal it.
Then arrange the meat in a suitable baking pan and start making the tomato sauce.
Finely chop the onion and stew it in a little oil.
As soon as the onion softens, add the finely chopped garlic and fry it as well.
After the garlic releases its aroma, add the tomatoes and let the sauce thicken over low heat, by stirring occasionally.
Do not cook the sauce to a very thick consistency, because it will also need to be baked in the oven.
Before removing it from the heat, add the spices (salt, black pepper, basil, oregano), a pinch of sugar and the cream to the sauce.
The cream will give the sauce a softness.
Pour the aromatic tomato sauce over the meat and bake in a preheated oven at 360°F (180°C) for 30 minutes.
Then remove the baking pan from the oven and arrange the strained and chopped mozzarella on top of the meat and sprinkle with grated Parmesan cheese.
Return the Italian dish into the oven for another 10-15 minutes to melt and lightly brown the cheeses, then serve.
