How to make
Cut the strawberries into small cubes, put them in a bowl, add the lime juice, mix gently and put them in the refrigerator.
Pour the water and sugar into the saucepan, put it on the stove until it boils without stirring.
Let it boil for 5 minutes, add the balsamic vinegar and boil for another 4-5 minutes.
Meanwhile, blend the raspberries (if desired, rub them through a strainer) and add them to the caramel.
Leave it to simmer on low heat, by stirring, until it thickens (about 5 minutes).
Cool completely.
Pour the balsamic-caramel sauce into the bowl with the strawberries and mix carefully.
Place a ring in a suitable plate, pour the mixture and level it out.
Carefully remove the ring, decorate the strawberry tartare with a scoop of ice cream or whipped cream and serve it.
