  • bananas - 1 pc. ripe
  • eggs - 2 pcs.
  • cottage cheese - 3.5 oz (100 g)
  • oats - 2 tbsp.
  • wheat germ - 1 tbsp.
  • cocoa - 1 tbsp.
  • coconut oil - 1 tbsp. or olive oil

How to make

Mash the banana. Add the cottage cheese and mix well. Crack the eggs and mix again.

Add the oats and wheat germ. Mix one more time. It does not need to be smooth and homogeneous.

Heat a non-stick pan and grease it with the fat you are using. Once heated, pour 3 tablespoons of the mixture.

Using the spoon, spread it out well, but do not make the protein pancake very thin.

It should remain at a thickness that will bake well and not remain raw, but will not burn either. Cook for about 2-3 minutes and turn them to the other side.

With this amount of mixture, you will get 4 mini pancakes, so after the second one, add the cocoa to the mixture, mix and continue baking the other two.

Of course, if you want all the pancakes to be chocolate, you can add the cocoa even before you start baking the pancakes.

Arrange them on a plate and garnish them with fresh fruit and chopped walnuts. If they are not sweet enough for you, they are delicious with honey and tahini, or with peanut butter.
