How to make
Buy frozen and cleaned octopus. Cut it and boil it in water to which you add a bay leaf and wine vinegar.
Be careful not to overcook it. It's best to check how cooked it is with a toothpick and if it can be pierced it's done, if it can't pierce the octopus, it's not cooked yet. Then wash it in lukewarm water.
Fry the octopus pieces on both sides in heated olive oil in a large pan, pour the white wine before the end of cooking. When the wine has evaporated, you can serve the octopus. The side dish is optionally one of the two offered.
Sauce:
Fry the finely chopped red onion in hot olive oil, then add the diced pepper and zucchini.
Fry briefly and season the vegetable sauce to taste with salt, black pepper, basil and garlic. Add the canned tomatoes. Boil everything together and serve with the octopus.
