How to make
Boil the octopus with the vegetables in a little water for 45 to 60 minutes to soften. Strain it and grill it on both sides, until it's ready.
Make the olive marinade: Put the olives in a blender, 2 cloves garlic, olive oil, balsamic vinegar, a little mustard, basil, salt and black pepper and blend everything.
Roll the octopus in the marinade.
Prepare the vegetables for garnish (zucchini, eggplant, peppers, cherry tomatoes, red onions) and then add salt, pour olive oil and bake them briefly in the oven.
Serve the grilled octopus with vegetables garnished with a sprig of basil or mint and onion.
