Ingredients

  • eggs - 5 pcs.
  • minced meat - 1.1 lb (500 g)
  • onion - 1 medium - sized onion (shallot)
  • parsley
  • garlic - 1 clove
  • salt
  • black pepper
  • white pepper
  • leeks - for decoration
  • For the breading
  • eggs - 4 pcs.
  • flour
  • breadcrumbs
  • For the puree
  • sweet potatoes
  • butter
  • milk
  • salt

How to make

Start off with the mashed sweet potatoes. Clean, wash the potatoes and boil them until done.

Strain the water and puree, by fresh milk, until you get the desired consistency. Add butter, salt, black pepper and mix well.

Put the eggs in boiling water and boil them for 5 minutes (I boiled them for 7, but that is a lot, they did not remain soft). Then put them in cold water and peel them.

Mix the minced meat by adding the finely chopped onion, parsley, salt, black pepper, white pepper and a grated garlic clove. Mix well.

Distribute the breading in three deep plates - 4 beaten eggs, the flour in another and the breadcrumbs in the third.

With wet hands, take the minced meat and spread it on the palm of your hand. Place an egg in the middle and shape it.

The breading is: flour, egg, breadcrumbs, then again egg and breadcrumbs. Fry in oil. Fry for about 7 minutes.

After removing the meatballs, place them on kitchen paper.

Fry very thinly sliced leeks in the same oil for 2 minutes.

Serve the Scotch Egg on a canapé made from the puree and carefully place the leek chips on top.
