For the Scotch Eggs
Boil and peel the eggs. Wrap the eggs with the smoked salmon fillets. Season the minced meat with salt and black pepper. Add an egg white and mix well. Cover each egg with salmon and the seasoned minced meat.
Heat some oil in a pan. Divide the breading ingredients into three bowls: flour, breadcrumbs and the beaten eggs.
Roll the scotch eggs in the flour first, then in the beaten eggs and finally in the panko breadcrumbs. Fry them in very hot fat until they aquire a golden color.
For the Tartar Sauce
Finely chop the pickles, dill and red onion. Mix them in a bowl with 1 tbsp. mustard and sour cream. Mix the sauce well.
Serve the Scotch Eggs you have prepared, along with the Tartar Sauce.
