How to make
Beat the soft butter and sugar until a cream is obtained. Beat in the egg and continue beating until a homogeneous mixture is obtained.
Pour the flour and baking powder, sifted in advance, vanilla and finely grated lemon peel.
Knead the butter dough, adding a little flour, if needed until it is hard enough to work with.
Divide the dough into 4 parts and color each one with a different color of confectionery paint. Knead the individual colored doughs until the paint is well distributed and evenly colored.
If the dough is soft, you can refrigerate it wrapped in cling film for 10-20 minutes to harden.
Roll out the 4 colors of dough on a floured surface and use Easter molds to cut out the cookies, arrange them at a distance in a tray covered with baking paper. Spread each cookie with slightly beaten egg white and sprinkle with multi-colored sugar pearls, by using your imagination. You will get 2-3 trays, depending on the distance you left between the cookies.
Bake the Easter cookies in a 360°F (180°C) oven for 10-12 minutes. Do not overbake so that the color does not change.
After removing them from the oven, let the Colorful Easter Cookies cool and then transfer them into a suitable serving dish.
