Ingredients

  • cream cheese - 3.5 oz (100 g)
  • gorgonzola - 2.8 oz (80 g) or another blue cheese
  • basil - 1 pinch
  • oregano - 1 pinch
  • mayonnaise - 2 - 3 tbsp.
  • saffron - 1 small pinch, powdered or grated
  • saffron - for decoration
  • mussels - 2.8 oz (80 g) small, marinated
  • onion - 1/2 onion
  • olive oil - 2 tbsp.
  • sugar - 4 tbsp.

How to make

To make cheese balls, mix the gorgonzola crumbled with cream cheese, basil and oregano. We mix very well, so that there are no large pieces left and put it in the freezer so that the mixture hardens well and it is easy for us to shape it.

We mix mayonnaise with saffron powder and cut the onion into thin crescents and caramelize it in olive oil with the sugar until golden brown. We spread it out on a non-stick surface to harden slightly.

We make the cheese into small balls, the size of a teaspoon.

We place them in the platter in which we will serve them and we put pieces of caramelized onion on each. Place a mussel on top of the onion and a little of the mayonnaise on top.

We finish off by decorating with saffron - put very little on each, because it is very flavorful.

An incredible explosion of flavors, extremely suitable for festive moments.

Tip: If you can't find marinated mussels, you can use fresh ones by steaming them briefly until they open up and then remove the shells. If they are bigger, cut them into pieces.
