If you haven't tried the combination of sheep's cheese and citrus flavor, I recommend that you do, it's very fresh and delicious.
For this purpose, you can determine the intensity of the citrus flavor and the contrast you prefer.
Here is my suggestion.
Crumble the cheese in a bowl and mix it with the mayonnaise, strained yogurt and finely grated sheep manchego cheese and garlic.
The lemon and lime peel are also grated and this is done with a special citrus grater, so that the white bitter part is avoided.
Squeeze the juice from both fruit and add the juice from the orange to the cheese.
