Ingredients

  • almonds - 3 tbsp. blanched and peeled
  • tomatoes - 1 lb (450 g) halved, without seeds
  • anchovies - 4 fillets
  • garlic - 2 cloves
  • basil - 20 leaves, fresh
  • mint - 5 leaves, fresh
  • cayenne pepper - 1 pinch
  • olive oil - 1/3 cup
  • parmesan - 1/4 cup grated
  • spaghetti - 1 lb (450 g)

How to make

Finely chop the almonds in a blender, add the tomatoes, anchovies, garlic, basil, mint and cayenne pepper and blend them into a puree.

Gradually add the olive oil. Transfer the mixture into a bowl and add the parmesan. Add salt to taste.

Boil the spaghetti in salted water, strain and set aside 1 cup of the water. Put them in serving plates and add the sauce.

Mix well and drizzle, if necessary, with a little water from cooking the spaghetti.

They are served immediately.

The spaghetti with anchovies and almonds are ready.
