How to make
Thoroughly clean the kid meat from fat and skin, if necessary, debone it. Cut it into suitable pieces and rub a little salt into the meat, let it rest for 15-20 minutes.
Heat a pan (teflon) with a little oil and seal the meat on all sides.
Clean the carrots, beetroot and potatoes and cut them into larger pieces.
Arrange the meat in a greased baking pan and the chopped vegetables around it. Pour oil on top and sprinkle with spices - salt, black pepper, paprika.
If you have fresh thyme, add one sprig, if not - add a few pinches dried. I also added a pinch of savory herb - it's a matter of taste.
Pour the red wine, you will probably need to add a little water to cover the vegetables.
Cover with aluminum foil and roast in an oven heated to 360°F (180°C) for about 2.5 - 3 hours. Check if the meat tears easily, then remove the foil and roast for 10-15 minutes.
Serve it sprinkled with parsley.
Important: the meat cooked this way does not smell, you cannot even tell that it is kid meat. To prevent your food from drying out, cover again with aluminum foil when it's ready.
