"A great healthy lunch or dinner with a cucumber and why not even breakfast!"

Ingredients

  • quinoa - 1/2 cup
  • white cheese - 1/2 cup (crumbled)
  • yellow cheese - 1/2 cup (grated)
  • sausage - 1/3 cup diced (or ham, smoked chicken)
  • eggs - 2 pcs.
  • nettles - 1/2 cup, chopped

How to make

The cup is 6.7 fl oz (200 ml).

The quinoa is washed well, poured with water in a ratio of 1:2 in favor of the liquid. Boil according to the instructions on the package, 10-15 minutes.

When boiled and in limited quantities, it can be included in keto mode. Cool and strain it.

The nettles are added to it, which have been previously cleaned, scalded and chopped. Add the white cheese, yellow cheese, sausage and eggs as well.

Mix everything and fill the muffin tins with this mixture. It can also be baked in a baking pan. For me, the amount was enough for 8 molds.

The savory muffins are baked at 360°F (180°C) until ready. Mine took 25 minutes to bake.
