Ingredients

  • flour - 15 oz (420 g) + for kneading
  • fresh yeast - 0.6 oz (16 g)
  • butter - 1.8 oz (50 g) melted
  • water - 1/2 cup (120 ml) slightly warmed
  • sugar - 1.8 oz (50 g)
  • vanilla sugar - 1/2 tbsp (5 g)
  • eggs - 2 pcs.
  • lemon peel - from 1/2 lemon
  • salt - 1 pinch
  • gin - 1 tbsp.
  • turkish delight - 9 oz (250 g)
  • powdered sugar - for sprinkling
  • honey - 1 tbsp.
  • oil - a few drops

How to make

Dissolve the yeast with a spoonful of the sugar in the water. Cover it with a towel and leave it to rise for 10-12 minutes. Grate the yellow part of the lemon peel on a fine grater.

Sift the flour into a deep bowl and sprinkle with the sugar. Make a well into which you will beat the eggs, but save one yolk for spreading at the end. Pour the gin, salt, vanilla sugar and activated yeast into the well.

Begin to knead the dough, by gradually adding the melted butter, until it is completely absorbed. Transfer the dough onto a floured surface and knead for about 10 minutes, by adding a little flour if necessary until it stops sticking to your fingers. Form a ball, grease it and leave it to rise in a warm place for 1 hour.

Divide the finished dough into 4 balls, roll each one of them into thin crusts and cut them into strips of 1.5 cm to 2. Along the length of each strip, place small Turkish delight pieces (about 1 cube each) and roll into a rose.

Place the finished roses onto baking paper, at a distance from each other. You should get two of these rectangular trays from the oven. Leave them to rise for another 25-30 minutes and then spread them with the egg yolk beaten with a little water, honey and a few drops of oil.

Bake until golden brown (10-15 minutes are enough) at 360°F (180°C) in a preheated oven.

While still warm, sprinkle with powdered sugar.

Serve with a glass of milk or aromatic coffee for a good start to the day.
