How to make
The onion and garlic are finely chopped and fried in oil.
The dried peppers are cleaned from the stems and seeds and grinded into small pieces in a blender.
They can also be crushed by hand or in a mortar a little coarser.
Add the tomato puree to the softened and fried onions and garlic and after stirring for a minute, add the peppers and the bay leaf.
Stir for another minute and pour 1.2 liters of water or vegetable broth. A good option is to add water with a spoonful of vegetables.
After the liquid boils, add the potatoes, cut into large pieces and the olives - pitted, if desired.
Add salt to taste and cook the dish over moderate heat for 30 minutes or until the potatoes are ready.
Beat the flour in a little water, pour in everything else and mix.
Leave the pepper stew to simmer over low heat and to thicken.
Serve the appetizing potato stew with a sprinkle of freshly chopped parsley.
