Ingredients

  • whole grain flour - 5.3 oz (150 g) wheat
  • wheat bran - 1.8 oz (50 g) or oat bran
  • salt - 2 tsp.
  • rye flour - 1.8 oz (50 g)
  • water - 12 fl oz (360 ml)
  • flour - 5.3 oz (150 g) of durum wheat
  • spelt flour - 5.3 oz (150 g)
  • oats - 4.2 oz (120 g) + more for sprinkling
  • sugar - 2 tsp.
  • poppy seeds - 0.35 oz (10 g) + more for sprinkling

How to make

First, in a large bowl, mix the poppy seeds with all the types of flour indicated.

Briefly grind the oats and bran. Pour them into the bowl, mix and form a well in the middle.

Heat the water to 100°F (37°C). Pour it into the well along with the sugar and yeast.

Mix with a small portion of the flour and let it activate for about 10 minutes.

Gradually start adding more flour to the well. Knead a soft dough, which must be kneaded for at least 10 minutes. Let the dough rise until doubled in volume - about 2 hours.

Lightly grease the kitchen counter and transfer the dough. Grease your hands and flatten the dough slightly. Then fold two of its edges inwards on one side and on the other side - this way you will get an oblong bread.

Spread the whole grain bread with water, sprinkle it with poppy seeds and oats.

Place baking paper in a tray and place the bread inside. Leave it to rise once more for 2 hours.

Turn on the oven at 430°F (220°C). Put an empty tray on the bottom to heat up.

Place the tray with the bread in the middle, and put 4 ice cubes in the tray at the bottom. Bake for 15 minutes. Reduce the degrees to 390°F (200°C). Add ice two more times to create steam.

Baking the bread takes about 40 minutes. Cool it on a wire rack, slice it and serve it.

The whole grain bread is ready.
