"Wonderful whole grain biscuits - the more times we pass by, the more times we grab one and the tray is emptied pretty quickly"

Ingredients

  • whole grain flour - 3.2 oz (90 g) of spelt or regular wheat
  • oats - 2.8 oz (80 g)
  • almonds - 2.1 oz (60 g) raw and peeled + for decoration
  • butter - 2.8 oz (80 g) cold, from the refrigerator
  • honey - 3.5 oz (100 g)
  • milk - 2 1/3 tbsp (35 ml)
  • brown sugar - 2 tsp. with a tip
  • baking powder - 1/2 tsp.
  • salt - 1 pinch
  • lemon juice - 1 tsp. (freshly squeezed)

How to make

Set aside 2 tbsp. of the oats and put the rest into a blender and grind them with the almonds. You can also use a coffee grinder.

Mix the grinded ingredients with the whole grain flour, baking powder, brown sugar and a pinch of salt.

To this dry mixture, add the diced cold butter and rub it with your fingers, until crumbs are obtained.

Pour the milk, lemon juice and honey and knead, until a smooth whole wheat dough is obtained. If it's sticky, sprinkle more flour. Add the whole or sliced oats to the dough.

To make it easier and not as messy, you can mix them in the blender for a short while and the dough will be ready (as long as your appliance is suitable).

Cut small balls from the dough and flatten them into circles with a thickness of 0.16″ (4 mm). Arrange the whole grain biscuits in two round trays lined with parchment paper.

Place 1 whole almond on top of each biscuit.

Bake the honey whole grain cookies in a 390°F (200°C) oven for 12-13 minutes for each of the trays.

Wait for them to cool and serve the whole grain biscuits with almonds and oats with a cup of coffee, warm milk or tea.
