How to make
Beat the soft butter with the sugar in a bowl and add the eggs one at a time, by beating continuously until fluffy.
Separately mix the sifted flour with salt, baking powder and cocoa and add the dry mixture to the egg mixture in parts.
Beat well and at the end add the vanilla, milk and cooled coffee.
Pour the mixture into a greased and floured cake tin or baking pan.
Put it to bake until ready in a preheated oven at 360°F (180°C).
Towards the end of baking, check that the coffee sponge cake is fully baked with a toothpick and if it is no crumbs should stick to it.
Spread apricot jam on the baked Coffee Sponge Cake and sprinkle with crushed walnuts if desired.
