Gorgeous vegan muffins with apples and carrots - very easy to make!
Pour the warm water into a deep vessel, convenient for stirring and dissolve the soda in it with the apple cider vinegar, which will help it activate. Add brown crystal sugar and unrefined sunflower oil, carob flour, hemp flour, wheat bran and fine oats.
Leave the mixture for 5-10 minutes for the oats to swell a little and in the meantime you can peel the apple and carrot and grate them. Then to the sweet liquid mixture, by stirring with a wire whisk, gradually add the thickening ingredients - whole grain flour and fine corn flour. Add the grated apples and carrots to the thickened mixture and mix along with the cinnamon.
In 12 pcs. molds for classic muffins, which we have smeared with sunflower oil with the help of a silicone brush and then sprinkled with a little flour - spread the mixture evenly. Bake the apple muffins at 180°C for about 25-30 minutes.
Serve them sprinkled with powdered sugar if you like.
