Ingredients

  • semolina - 3.5 oz (100 g)
  • flour - 1 cup
  • baking powder - 1 tbsp (10 g)
  • brown sugar - 1 cup
  • cocoa - 1.1 oz (30 g)
  • orange juice - 1 cup
  • oil - 2 tbsp.
  • tangerines - 2 pcs.
  • for the glaze
  • soy milk - 2/5 cup (100 ml)
  • cocoa - 1 - 2 tbsp.
  • coconut oil - 2 tbsp.

How to make

In a bowl, mix all the dry ingredients (semolina, flour, sugar, cocoa and baking powder). Mix them well and add the oil and juice.

Peel and dice the tangerines (if they have seeds, remove them). Add them to the mixture and mix well.

Pour it into a greased mold (18 cm), which is also sprinkled with cocoa.

Bake the cake at 360°F (180°C) for about 40 minutes. Take it out and leave it to cool. Then transfer it onto a plate.

Put the butter, milk and cocoa in the saucepan. Put it on the stove and stir, until it melts and starts to thicken.

Allow the glaze to cool slightly and pour it over the cake.

Garnish it with caramelized dried tangerines.

The vegan cake with semolina and tangerines is ready.
