Ingredients

  • broccoli - 12 oz (350 g) with the stalk
  • coconut flour - 0.7 oz (20 g)
  • lemons - 1 pc. (medium - sized)
  • garlic - 1 large clove
  • olive oil - 2 2/3 tbsp (40 ml) + for drizzling when serving
  • cream cheese - 2.1 oz (60 g)
  • salt - 1 tsp. or by taste

How to make

This vegetable pate can be made with whole broccoli or just the stalks of the vegetable.

For example, I use 3-4 when I prepare some broccoli dish and instead of throwing away this part of such a healthy vegetable, I make it into a pate.

If the broccoli stalks are older and thicker, so they must be peeled from the outer layer, which is harder and may have veins. Boil them in slightly salted water, they should soften nicely.

If you prepare pate from just the broccoli florets, they will cook much faster than the stalks.

Strain the water and transfer the vegetable into a blender. Pour olive oil, coconut flour, salt and the juice of one medium-sized lemon. I like it sour, but you can adjust it according to your taste.

Add the peeled garlic clove and blend. Depending on the thickness, you can decide whether to add more cream cheese or olive oil to dilute it.
