How to make
Wonderful mini pancakes!
In a bowl, beat two eggs with a fork. Add the milk and a pinch of salt.
Towards the end of beating, add the coconut flour, ground flaxseed and baking powder.
Mix the products well.
At first it is like a thin paste, but after only a minute or two the coconut flour swells and a thicker mixture is obtained, like puree.
Heat a frying pan, grease it with oil and pour 1 tbsp. of the mixture by shaping the appetizing coconut pancakes. They are not like crepes, but more like American pancakes, but in a mini version.
Bake them on low heat on the 3-4 degree, turn them with two metal and wide spatulas. That way is easiest for me.
Serve them with fresh fruit and strawberry jelly.
The pancakes with coconut flour and milk are gorgeous. This is for half a dose, 8-9 pancakes come out of it! Enjoy!
