"I served the fricassee with turkey and yogurt sprinkled with some fresh parsley and homemade bread."

Ingredients

  • turkey meat - 1 leg about 1.1 lb (500 g)
  • butter - 1.1 oz (30 g)
  • oil - 2 tbsp (30 ml)
  • flour - 2 full tbsp.
  • yogurt - 5 tbsp.
  • egg yolks - 2 pcs.
  • lemon - juice of 1/2 lemon
  • nutmeg - a pinch
  • salt
  • black pepper - 10 grains

How to make

I boiled the turkey leg in the pressure cooker for 30 minutes in salted water with a few whole peppercorns.

I then removed the skin, deboned and cut the meat into bite-sized pieces and strained the broth.

I beat the 2 yolks with 5 spoons of yogurt and added the juice of half a small lemon and a pinch of nutmeg.

I heated the butter and oil in a deep frying pan and fried 2 full tablespoons of flour.

I used whole wheat spelt flour, but you can make the fricassee with white wheat flour.

Then I started adding some of the hot broth, until the desired thickness of the sauce was obtained.

I added the egg yolk mixture in a thin stream, by stirring, as well as the meat, cut into pieces.

I finally seasoned the Fricassee with salt and freshly ground white pepper and let the dish simmer on a low heat for 10 minutes, by stirring occasionally.

I served the Turkey and Yoghurt Fricassee sprinkled with some fresh parsley and homemade bread.
