How to make
Boil the meat in a pot of water and a little salt, until it is fully cooked.
Take out the meat and leave it to cool.
Cut it into small pieces and set it aside.
In another pot, fry the flour with a little fat, until it changes its color.
Dilute it with the broth, in which the meat was cooked.
Add as much salt as you like and nutmeg.
Add the turkey breasts.
In a bowl, beat the egg yolk and yogurt with a wire whisk. Add the mixture to the fricassee.
Stir and leave it to boil.
Remove it from the heat after a few minutes, leave it to cool and serve the turkey fricassee with freshly ground black pepper.
