How to make
Wash, dry the turkey legs and rub them with black pepper. Seal them in olive oil, until they aquire a golden color on all sides, then remove them and place them into a plate and set them aside.
In the same fat, put the butter and when it melts, add the vegetables cut into cubes. Fry them and then stew with the wine.
Return the meat, cover with water and boil for about 1 hour and 20 minutes, or until the turkey begins to separate from the bone. Take it out and debone it and puree the vegetables into a smooth cream.
Season with salt and if desired, dilute with a little water or vegetable broth. You can also add cream.
Finally make the black rice: Boil it in water (according to the instructions on the package) in which you have put the grated ginger, lemongrass and salt.
Serve the dish, by placing a ladleful of the sauce on each plate/portion and the rice, shaped into a ring, on top. Spread the shredded turkey on the sides and sprinkle with dried coriander leaves.
