Ingredients

  • beetroot - 2 medium heads
  • tofu - 5.3 oz (150 g)
  • olive oil - 2 - 3 tbsp.
  • himalayan salt
  • apple cider vinegar - 1 tbsp.
  • lemon juice - 2 tbsp.
  • fresh garlic - 3 stalks

How to make

Clean the beetroot and peel them. Boil them in salted water in a pot, until they soften.

Cool the beets and cut them into slices.

Peel the garlic and finely chop it. Put it in a blender, add olive oil, apple cider vinegar and lemon juice. Blend, until a smooth mixture is obtained.

Arrange the beetroot in the bottom of the salad bowl, add the tofu cubes on top and pour the garlic dressing over everything.
