Ingredients

  • zucchini - 1.8 lb (800 g)
  • eggs - 5 size L or 4 size XL
  • yogurt - 5.3 oz (150 g)
  • white cheese (feta) - 2.1 oz (60 g)
  • sheeps's cheese - 2.1 oz (60 g)
  • mozzarella - 2.1 oz (60 g)
  • emmental - 2.1 oz (60 g)
  • thyme - 1 tsp. fresh or 1/2 tsp. dried
  • oregano - 1 tsp. fresh or 1/2 tsp. dried
  • salt - by taste
  • black pepper - by taste
  • olive oil - for greasing

How to make

Wash and cut the zucchini into wide strips (about 2-3 mm thick). Or into slices of the same thickness. Dry them with kitchen paper or a towel.

Beat the eggs in a bowl. Add the yogurt, crushed/grated cheeses, as much salt and black pepper as you like and the green spices to them. Stir well.

Grab a small baking pan and grease it. Arrange two rows of zucchini on the bottom and lightly grease them. Cover them with some of the mixture. Alternate, until you run out of products, with the last layer being the zucchini. Sprinkle with grated yellow cheese.

Bake in a preheated oven at 370°F (190 g), until the cheese aquires a golden color. Minimum 25 minutes. Depending on the type and quality of the yellow cheese, it will take between 25 and 40 minutes.

Note: The cheeses can be substituted with whatever you like. Yellow cheese is always a finishing touch.
