How to make
Separate the florets from a large head of broccoli and remove the tough part of the stems.
Blanch the broccoli in salted water for no more than a minute or two to preserve their crunchiness and fresh green color.
Grate the blue cheese and place it in a non greased and cold pan. Add a teaspoon of the water in which you boiled the broccoli. Pour the sour cream and put the pan on a moderate heat on the stove.
Season only with black pepper since the blue cheese is salty enough. Leave the cheese to melt and the sauce to reach a boiling point. Cook, until it thickens and remove it from the heat.
Arrange the blanched broccoli in a buttered baking dish. Pour the blue cheese sauce over them.
Beat 2-3 eggs on top and transfer the baking pan into the oven for 15 minutes at 390°F (200°C), so that the casserole can aquire an appetizing color.
