How to make
Start by preparing the sauce, by heating the cream over a low to moderate heat and crushing the blue cheese in it.
Stir, until it melts and the mixture is smooth.
Season with black pepper, nutmeg and salt and leave the sauce on a very low heat, while stirring occasionally, so that it doesn't burn.
Clean the pork tenderloin from the skins and excess fat on the surface. Rub the meat with black pepper and do not add salt just yet.
Heat a grill pan over high heat and grease it well with olive oil. When it is heated well enough, add the whole pork tenderloin and seal it, until it is browned on all sides.
Try not to overcook it on a side that has already browned, because this dries the meat.
Remove the tenderloin and place it on a kitchen board, cover it with foil or a plate and wait 5 minutes.
Meanwhile, check the sauce and if it is ready, remove it from the heat. It does not need more than 10-15 minutes of simmering on very low heat.
Cut the meat into thick slices. When cut, it should be pink on the inside.
Seal the tenderloins on each side in a heated grill pan, by adding a little more fat.
Do not overcook it, so that it doesn't dry out the pork.
A maximum of one minute on each side would be enough, but it still depends on how thick the pieces are.
Serve the pork tenderloins with the aromatic sauce and consume while the grilled pork tenderloins with blue cheese sauce are warm.
