How to make
In a bowl, mix the dry ingredients - sugar, flour, vanilla, grated lemon peel, salt.
I mixed walnuts and cashews 1:1, grinded them with a coffee grinder and added them to the dry ingredients. Add the egg yolks and mix with a fork.
In a clean and dry container, beat the egg whites into a foamy mixture with a mixer and carefully add them to the walnut dough. The oven is heated to 340°F (170°C).
With a small spoon, small cookies are formed on baking paper, if you don't have any at the moment like me, grease the tray with oil and sprinkle with breadcrumbs.
Bake the walnut cookies for 8-10 minutes, until the edges aquire a brown color. Remove them with a pastry spatula.
This recipe is made only with walnuts, but can also be made with almonds.
The cookies with cashews and walnuts are ready.
