How to make
Clean the liver and carefully wash it under running water. Season it with as much salt as you like and a little black pepper. Seasoning can only be done with salt and sprinkled with black pepper after removing from the heat.
If the pieces of liver are large, cut them into bites. Pour them into the pan. Fry, until they aquire a golden color on both sides in preheated oil.
The liver can be fried the same way after being rolled in flour.
Frying takes 2-3 minutes per side and must be on moderate heat, not too high.
It is served with fresh salad and lemon.
