How to make
Boil the corn in lightly salted water, until the kernels soften. Leave it to cool and with a serrated knife cut each crosswise into 2.5-3 cm thick circles. Corn cobs are hard, but cut easily with a serrated knife with a little force, but be careful not to cut yourself though.
The tomatoes are also cut into rings of similar width and size. Cut the peppers into pieces and the onions into quarters.
On metal skewers, thread the vegetables in the order you prefer, the main protagonist should be the corn - it should predominate.
Place them in a baking pan and sprinkle with olive oil and salt on all sides. Bake in an oven heated to 450°F (230°C), until desired browning is obtained. If you like, you can also grill or pan roast, by just sealing the vegetables.
While the skewers are cooking, prepare the sauce for them, by mixing all the ingredients listed and adding more if you prefer.
Serve them warm with the sauce.
