How to make
Clean the artichoke by peeling off the tough outer leaves, until you get to the light core.
Cut about 1-2 fingers off the tip, which is also hard and should not be eaten. From 2.2 lb (1 kg) of the vegetable, you should get 1.3 lb (600 g) of artichoke in its cleaned form.
Cut them in half and soak them in a bowl of water in which you have squeezed half a lemon. This will avoid its premature darkening.
Finely chop the garlic and fry it in olive oil over low to moderate heat.
Pour the starch by pulling away from the heat and beating well with a wire whisk, then pour the beer, while beating.
Add the artichoke halves and stew for 15 minutes.
Add the spices, as much salt as you like and bacon, which has been cut into small strips or cubes. Pour the meat broth and boil, by stirring occasionally, for another 10 minutes.
You can dilute the finished dish with more broth or water to make the sauce thinner, this is of your choice and preference.
