Ingredients

  • potatoes - 4 pcs. medium - sized, fresh
  • olive oil - 4 tbsp.
  • salt - coarse, flaky

How to make

Wash the potatoes and dry them slightly, but let them remain a little moist.

Place them on two sheets of baking paper, two at a time and spread each with a spoonful of nice aromatic olive oil.

Fold the paper to form a package and turn it over so the folds are at the bottom and won't unfold.

Put the packages in an oven heated to 390°F (200°C) and bake for 30-35 minutes. If the paper you use is white, slightly transparent, you will be able to tell when they are ready by their color.

Take them out of the tray and with a wide metal spatula, smash each of the potatoes without unwrapping and using firm pressure on them, so that they are nicely cracked and flattened. If you feel that they are hard, return the baked potatoes back into the oven for a little more time.

Serve the finished baked smashed potatoes warm. They are wonderful and delicious, just sprinkled with coarse flaky salt and a little more olive oil, but you can drizzle them with sauce, dressing or sprinkle your favorite spices on them.
