How to make
Smear the clay pots with butter. Arrange pieces of feta cheese, the peppers (cut into pieces or round slices), the diced sausages and an onion head, cut into crescents, for each clay pot. Fill the clay pots.
On top, break 2 eggs into each and add a little cold water - this makes the omelette fluffier.
Bake in a preheated oven. Before they're fully ready, add grated cheese, return to the oven. Finally, sprinkle with a little finely chopped parsley, black pepper and serve warm.
The taste of the omelettes prepared in this way is unique, it's got no relation to your typical omelette.
