How to make
Cook the meat, cool it and dice it. Add the chopped cheese and parsley to it. Stir well. Boil the potatoes. Peel and mash them.
Leave them to cool and add the eggs, butter, cheese and spices to them.
Mix well and start adding the flour sifted with the baking powder. Knead a smooth dough.
Sprinkle the kitchen counter with flour and roll out the potato dough into a crust. Using a glass, cut out circles. Put some of the filling in each one and cover it well. Shape them into oblong croquettes.
Roll them first in the eggs and then in the breadcrumbs. Fry them in heated oil, until they aquire a golden color. Leave them to drain onto kitchen paper and serve them.
The potato croquettes with chicken and cheese are great.
