How to make
For these oatmeal muffins, cut the pumpkin and apple into chunks and put them in a blender and blend them. Add the oats, raisins or cranberries. If the oats are not fine, you can also grind them a little, but do not turn them into flour.
Add the spices (cinnamon and nutmeg) and mix well.
In a separate bowl, beat the eggs with the sugar, until a fluffy mixture is obtained. Pour the oil in a thin stream, then add the fruit and spice mixture.
Finally, add the flour, which has been previously sifted with baking powder. If you are using baking soda, add it to the liquid ingredients along with the lemon juice, but without activating it in it beforehand.
Mix, until a smooth mixture is obtained and distribute it into 12 greased muffin tins lined with paper cups. I used silicone molds, they are smaller and make more sweet muffins.
Bake the pumpkin muffins in a 360°F (180°C) oven for about 35 minutes.
Serve the delicious muffins with warm milk or coffee.
