How to make
The spinach is cleaned from the roots. Do not remove the stems from the leaves. Wash and strain them from the water.
In a deep frying pan, fry the chopped garlic for seconds with a little olive oil. Add the washed spinach, season with the spice and blanch them over high heat.
When the water boils, remove it from the heat and leave it to cool.
In two deep plates, lightly mix one egg at a time with a fork and divide the spinach into two equal parts in each.
With the fork, spread the blanched spinach thinly across the bottom of the plate.
Heat the fat in a frying pan and carefully slide the shaped spinach schnitzels at an angle. Fry, until they aquire a golden color on both sides.
Serve them with yogurt.
