These super quick muffins are easy to make and delicious. Their texture is slightly moist, but at the same time they are fluffy and airy. Their spicy finish thanks to the cayenne pepper adds a special charm to them, but if they are prepared for children, of course, it is best to avoid this ingredient.
Before you start mixing the savory muffin mixture, prepare your cauliflower. Wash it, chop it and grind it in a blender. Turn on the oven to heat up to 360°F (180°C).
Beat the egg with the salt and gradually add the milk, oil, cauliflower and yellow cheese. Season with the cayenne pepper if you like and sift the flour with the baking powder into the mixture. Mix or beat briefly with the mixer, until a homogeneous sponge cake batter is obtained.
Spray grease 8 paper muffin cups and place them in a muffin tin.
Distribute the mixture evenly in the cups and put the muffin tin in the heated oven, which has reached a temperature of 360°F (180°C).
Bake for 25 minutes or until they aquire a golden brown color and lightly crinkle on top.
The baked savory cauliflower muffins can be served immediately while they are still warm.
