"The filling in these stuck together cookies can be whatever you like - jam, marmalade and even chocolate - you decide what will be more best for the little ones"

Ingredients

  • flour - 10 oz (280 g)
  • baking powder - 1 tsp.
  • eggs - 1 pc. XL size
  • yolks - 1 pc.
  • vanilla sugar - 0.7 oz (20 g)
  • sugar - 2.8 oz (80 g)
  • lemon peel - 1 level top tbsp. (shavings, only the yellow part)
  • oil - 4 2/3 tbsp (70 ml)
  • salt - 1 pinch
  • jam - or marmalade for sticking (optional)

How to make

Beat the egg with the yolk, sugar and a pinch of salt. Add the oil, lemon peel and vanilla sugar.

Sift the flour and add it to the liquid mixture along with the baking powder. Knead a soft and smooth dough.

Sprinkle a work surface with flour and roll out the dough into a crust that is about 0.16″ (4 mm) thick. With a round shape, cut out small sweets, which are about 1.6″ (4 cm) in diameter. Arrange them on a tray lined with baking paper, by leaving some space between them.

Collect the cutouts and roll them out and cut them again - until you run out of dough. You will end up with about 4 baking trays.

Bake them in an oven heated to 360°F (180°C) for about 15 minutes - or until you see that the cookies aquire a golden brown color at the edges.

Leave them to cool, then stick the cookies together with jam or marmalade.

Easy and very tasty cookies, which will please children and adults.
