"Warm potato salad with cucumber - a wonderful side dish for meat"

Ingredients

  • new potatoes - 1.1 lb (500 g)
  • cucumber - 1/2 pc.
  • onion - 1 medium - sized onion (100 g)
  • parsley - 3 sprigs
  • butter - 1.4 oz (40 g)
  • olive oil - 2 2/3 tbsp (40 ml)
  • garlic - 2 cloves
  • rosemary - 2 pinches (dried)
  • mustard - 1 full tsp.
  • vinegar - 3 tbsp.
  • salt - by taste

How to make

Wash the new potatoes without peeling them and boil them in very slightly salted water, so that they do not soften too much.

While they are cooking, chop the onion and fry it in olive oil, until it softens.

Strain the boiled potatoes well and cut the larger ones and leave the small ones whole.

Put them to fry lightly in the butter along with the garlic, rosemary and the softened onion.

When they start to brown slightly, pull the sauteed potatoes off the heat and leave them to cool slightly.

Then cut the cucumber into small cubes and mix it with the potatoes.

Season the warm salad by mixing it with the mustard, vinegar, as much salt as you like and finely chopped parsley.

An extremely delicious potato salad, which can be served cold and is suitable as a side dish to meat or fish.

The cucumber adds a very interesting and fresh taste to the potatoes!
