How to make
The potatoes are boiled and peeled. Cut and arrange them in a bowl. Cover them with the vegetable broth and stir.
Leave them to soak in the broth for 15 minutes and add the cucumber, which cut into half and the finely chopped onion.
Prepare a dressing from the olive oil, vinegar, mustard, salt and black pepper. Drizzle it over the potato salad and serve it.
