How to make
Pick hard and healthy pears. They are peeled and their core is removed.
They are cut into cubes. Drizzle them with lemon juice.
Put them in a pot with a little water, cinnamon, orange peel and vanilla.
Leave them to simmer over moderate heat on the stove for about 1 hour, or until it has thickened enough.
Remove it from the heat and add the chocolate. Stir and cook for another 1-2 minutes, until it has melted.
Remove the pear jam from the heat and distribute it into hot, dry jars to the top.
Close with a lid and turn them over.
