Ingredients

  • for the dough
  • eggs - 1 pc.
  • sugar - 3.5 oz (100 g)
  • butter - 2.8 oz (80 g)
  • baking powder - 1/2 tbsp (5 g)
  • vanilla powder - 1 pc. (0.2 g)
  • flour - 5.3 oz (150 g)
  • for the filling
  • plums - 3 - 4 pcs.
  • peaches - 1 pc.
  • raspberries - 1.8 oz (50 g)
  • blackberries - 1.8 oz (50 g)
  • orange peels - 4 - 5 pcs. (from jam)
  • brown sugar - 1 tbsp.

How to make

The fruit cake is prepared in a 8.5″ (22 cm) cake tin. Beat the butter with the sugar into a fluffy cream. Add the eggs one at a time, by beating well after each one. Add the sifted flour with the baking powder and vanilla.

Stir and divide the mixture into two parts and one should be more than the other.

Leave the mixture, that is more, in the refrigerator for at least 1 hour or in the freezer for 30 minutes. Then spread it out into a suitable cake tin.

Dice the plums and peach. Spread them over the dough. Add the raspberries and blackberries. Sprinkle with the brown sugar.

Using a spoon, spread the other part of the dough over the fruit and it does not have to be completely covered.

Bake at 360°F (180°C) for about 35-40 minutes. Take it out and serve it well chilled, sprinkled with powdered sugar and if you like, you can add ice cream.
