For these healthy coconut muffins, separate the whites from the yolks. The egg white mixture is beaten, until it becomes white and the honey and brown sugar are added to the egg yolks.
The coconut oil is added to the yolk mixture, which should be slightly melted, so that it can be beaten more easily. Next up is the yogurt. It must be beaten, so that there are no lumps.
Pour the baking powder into the coconut flour and mix, then add it little by little to the yolk mixture, until it is homogenized.
Finally, with a spatula, add the egg whites little by little, until a fluffy mixture is obtained.
When using coconut flour, it is normal for the mixture to not become very airy, because the flour is heavier. Therefore, it is very important to mix it carefully.
Divide the mixture into muffin tins and bake them at 180°C, until they're fully baked.
If desired, the mixture can be divided in half and unsweetened cocoa can be added to one half.
Once the muffins are ready, they can be spread with egg whites and sprinkled with sugar sprinkles.
