How to make
Put the softened butter in a bowl, add the sugar and beat with a mixer, until a homogeneous mixture is obtained.
Add the egg and continue beating for another 5 minutes. Add the coconut shavings and honey.
Sift the flour with the two vanillas and half a teaspoon of baking powder. Add them in batches to the mixture.
Finally, add the blueberries - fresh or frozen.
In this case, they are fresh. Homogenize the mixture well.
Line a large tray with a piece of baking paper. With a small spoon, scoop some of the mixture and place in a pile on the paper.
Leave plenty of room, because the coconut cookies expand a lot.
Bake at 360°F (180°C) in a preheated oven, until they aquire an appetizing color.
Cool the finished blueberry and coconut biscuits on a wire rack.
