Ingredients

  • potatoes - 2 pcs. (large)
  • smoked salmon - 3 slices
  • olives - 8 - 9 pcs. (green, pitted)
  • butter - 2 tbsp. (about 18 - 20 g)
  • white pepper - by taste
  • salt - by taste
  • olive oil - 2 - 3 tbsp.
  • salt - by taste
  • breadcrumbs - for sprinkling

How to make

Wash the potatoes well and without peeling them, cut each of them in half (lengthwise). Spread the halves with olive oil, rub them with a little salt and place the potatoes with the cut side facing down in an greased or covered with parchment paper baking pan.

Put it in the oven, heated to 200°C and bake for about 30 minutes.

Check them with a fork to see if they have softened and cooked through and if so, take them out and use a spoon to carve them out without going all the way through.

While still hot, mash the potato core with a fork along with the butter, white pepper and a little salt.

Finely chop the olives and salmon and mix them with the mashed potatoes.

Fill the carved out potatoes with this mixture. Sprinkle them with breadcrumbs, by pressing them lightly with your fingers, so that they can stick to the filling.

Place them back into the oven briefly, until they aquire a crust.

Serve the stuffed potatoes warm, but not too hot, so that you can taste their flavor much better.
