How to make
First prepare your dough. Put the sifted flour in a bowl, add olive oil, salt and pour the yeast dissolved in warm water and sugar.
Knead a soft dough. Form it into a ball, spread it with olive oil, cover the bowl with a piece of cling film and a towel. Leave it in a warm place, until it has doubled in size.
While this is happening, prepare the meat. Finely chop the rosemary sprigs, parsley and garlic cloves.
Coat the meat very well with salt and olive oil. Rub it with the green spices. Almost cover all of it.
In a large pot, heat the olive oil with one clove of garlic for a minute.
Remove the clove and add the meat. Fry it for 3-4 minutes per side. Pour the wine over the meat. Wait a few minutes for the alcohol to evaporate and pour the vegetable broth.
Cover the dish and cook on moderate heat for 20 minutes. Remove the pork, cool it!
Roll out the dough onto a floured surface. From its end, cut stars for decoration with a mold. Cover the meat with thin slices of prosciutto crudo. Put the meat in the middle.
Wrap it well on all sides. Arrange the stars on the dough. Spread it with egg yolk beaten with milk. Sprinkle with sesame seeds.
Put the baking pan in a non preheated oven, turn it on to 320°F (160°C) and roast the pork, until the dough aquires an appetizing color, or for about an hour and a half.
Wait 15 minutes before slicing your New Year's Roast Pork!
